Bristol multiple operator, Zazu’s Kitchen, takes on Knowle Hotel, its first Star pub

Award winning Bristol restauranteur and pub operator, Zazu’s Kitchen, has taken on The Knowle Hotel in Knowle and with Star Pubs & Bars is undertaking a £300K joint refurbishment of the pub to turn it into a family friendly local offering great food and drink.

Funds are being spent on a complete overhaul of the interior and exterior to create a partially open L-shaped room with a new bar and a centrally located large visible kitchen to allow the pub to offer great food, Zazu’s signature.  The pub’s large garden will also be transformed from scrubland to a lovely garden with fruit trees, plants, stylish lighting and a terraced area for alfresco drinks and dining.

The pub’s design will be classic rather than industrial vintage.  The team has used reclaimed materials and vintage lighting and furniture and has commissioned its own bespoke furniture using old wood to create the look and feel they want to achieve.

The pub will have the Smart Dispense system and stock a range of premium ales, lagers and ciders.

Heading up the kitchen will be the head chef from The Gloucester Old Spot, which won this year’s Bristol Food Award for Best Food pub.
